Stopped by the Christian Fischer's dwellings in Th Stopped by the Christian Fischer's dwellings in Thermenregion south of Vienna. Surprisingly, lots of oil pumps around, hopefully Trump never knows! He made his first Pinot Noir when I was 2 years old, absolutely no chances of tasting it today, but 2016 Pinot "100 cases" feels silky AF. The winery itself is hidden in one of the inconspicuous buildings in a quiet village of Sooß with breathtaking views on hilly vineyards. It’s not exactly steep, but enough to remind the gentle slopes of Chablis. Fischer's wines show great ambition and passion for both reds and whites as well as for high-end orange wine, 95 Falstaff, no joke. And the family goes back to the times when vineyards were more of a survival necessity than today's luxury surplus. The cellar holds an intriguing patchwork of barrels: elegant French barriques beside broad-shouldered Austrian casks, some young and golden, others darkened by decades of service. The range spans from 225-liter French oak for the concentrated reds to 500-liter casks for Rotgipfler and Chardonnay, and a few towering 3,000-liter Austrian vats for the Classic wines. The whites age in softly toasted barrels, the reds in deeper, medium-plus oak. In here, there’s a special focus on local varieties Zierfandler and Rotgipfler, a tough job for one’s brain and mouth, but a great attraction for tastebuds. For those unable to learn the presence of Gruner Veltliner and Chardonnay will make life easier.
